A taste of Corsica

For a simple taste of Corsica place wedges of fresh fig, ripe goat’s cheese, and a few rocket leaves onto slices of Parma-style ham or Bresaola and wrap the meat around the filling.  Serve each ‘wrap’ with a chilled glass or two of crisp, dry rosé.

My nose was first in alerting me to the proximity of a unique Corsican institution. In a small square, in the bustling market town of Ile Rousse, Le Bon Café has been roasting coffee since 1928. Run by the same family throughout, the working roasting house is just as much a shrine to the drink as it is a working concern.

Calvi is the region’s largest town and, according to locals, the birthplace of Christopher Columbus. The town is also home to a medieval citadel and a stunning stretch of white sandy beach, so I parked up and went to explore.

The combined lure of more positive recommendations for a destination than I could remember, and the thought of being immersed in a place influenced by two of my most favourite foodie countries, France and Italy, was almost too much to bear!
